Instructions

  1. In a blender or food processor, puree the sliced strawberries with the sugar and lemon juice until smooth. Strain the mixture through a fine sieve to remove seeds for a silky texture.
  2. Sprinkle gelatin evenly over the cold water in a small bowl and let it bloom for about 5 minutes until spongy.
  3. Gently warm the gelatin mixture for 10-15 seconds in the microwave or over low heat, stirring until dissolved. Do not boil.
  4. Stir the dissolved gelatin into the strawberry puree evenly. Let it cool to room temperature without setting.
  5. Whip the chilled heavy cream to soft peaks.
