- 1/2 cup (100g) granulated sugar
- 1 tablespoon freshly squeezed lemon juice
- 1 cup (240ml) heavy cream, chilled
- 2 teaspoons unflavored gelatin powder
- 3 tablespoons cold water
- Optional garnish: fresh mint leaves, sliced strawberries, or white chocolate shavings
Instructions
- In a blender or food processor, puree the sliced strawberries with the sugar and lemon juice until smooth. Strain the mixture through a fine sieve to remove seeds for a silky texture.
- Sprinkle gelatin evenly over the cold water in a small bowl and let it bloom for about 5 minutes until spongy.
- Gently warm the gelatin mixture for 10-15 seconds in the microwave or over low heat, stirring until dissolved. Do not boil.
- Stir the dissolved gelatin into the strawberry puree evenly. Let it cool to room temperature without setting.
- Whip the chilled heavy cream to soft peaks.
- Fold the whipped cream gently into the cooled strawberry gelatin mixture in three parts to maintain airiness.
- Pour the mousse into serving glasses or bowls, cover, and refrigerate for at least 3 hours until set.
- Garnish with mint leaves, strawberry slices, or white chocolate shavings before serving.
