Description
A light and refreshing peach sorbet made with fresh ripe peaches, sugar, water, and lemon juice. This smooth, fruity dessert is perfect for warm weather and is dairy-free and vegan.

- 4 cups fresh ripe peaches, peeled and sliced (about 6 medium peaches)
- 3/4 cup granulated sugar
- 1 cup water
- 2 tablespoons fresh lemon juice
- Optional: pinch of salt
Instructions
- Combine sugar and water in a small saucepan over medium heat. Stir until sugar dissolves forming a simple syrup. Remove from heat and cool to room temperature.
- Peel and slice peaches by blanching in boiling water for 30 seconds, then plunge into ice water to loosen skins.
- Place peeled peaches in a blender or food processor. Add cooled simple syrup and lemon juice.
- Blend until smooth and creamy with no large fruit pieces remaining.
- Add a pinch of salt if desired to enhance flavors.
- Pour mixture into an ice cream maker and churn for 20-25 minutes until soft sorbet forms.
- If no ice cream maker, freeze mixture in shallow container and stir every 30 minutes for 2-3 hours until smooth and frozen.
- Transfer sorbet to an airtight container and freeze for at least 2 hours before serving.
Notes
- Use ripe peaches that smell sweet and are slightly soft for best flavor.
- Blanching peaches improves texture and makes peeling easier.
- Sorbet is dairy-free, vegan, and a low-calorie dessert option.
