Instructions

  1. Make the crust: In a large bowl, whisk together the flour and salt. Add the cold butter cubes and, using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs with pea-sized butter pieces.
  2. Gradually add ice-cold water one tablespoon at a time, mixing lightly until the dough starts to come together. Shape into a disc, wrap in plastic, and chill for at least 30 minutes.
  3. Prepare the filling: Combine sliced peaches with sugar, cornstarch, cinnamon, vanilla extract, and lemon juice. Toss gently to coat and set aside.
  4. Roll out the dough: On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  5. Assemble the galette: Spoon the peach mixture into the center, leaving a 2-inch border. Fold and pleat the edges over the filling to create a rustic edge.
  6. Brush the crust with beaten egg and sprinkle coarse sugar over the crust and fruit edges.
